
I don't tend to cook much during the summer months. The van has no AC, so turning on a stove is like starting a fireplace. No thanks. Most of our meals consist of iced coffee, salads, cereal; occasional yogurt, Costco hot dog, or ice cream. With temperatures dropping, my appetite is starting to increase. Also, the van always warms up while I cook, so it's nice and toasty inside.
Recently, I bought a new pan. I couldn't wait to try and create something I would pass on 99% of the time. There were potatoes in the basket and chicken thighs in the fridge. As you will see, this recipe is very simple and basic. But, what is special about it, is that I am able to cook all this food on a single burner stove, in the only pan I own, inside my tiny home.
PAN FRIED POTATOES recipe
INGREDIENTS
medium potatoes 1 tsp salt 1/2 onion 1 tbsp chopped parsley 2 minced garlic cloves 1 tbsp oil
INSTRUCTIONS ⇾ cut the potatoes into cubes, wash them and place them into a pan ⇾ pour water over and bring to a boil. (marinate the chicken thighs)* ⇾ low heat for 10 min ⇾ drain water ⇾ add oil to the pan, then sauté onion and garlic ⇾ add the potatoes and fry until browned ⇾ add parsley and mix well
⇾ enjoy
TACO CHICKEN THIGHS recipe
INGREDIENTS
9 chicken thighs 1 tbsp taco seasoning (I like my food lightly flavored) 1 tbsp oil 1/2 half chopped onion 1 minced garlic
INSTRUCTIONS
⇾ first marinate the chicken thighs* (add oil and seasoning and mix it well)
⇾ add the mixture to the pan
⇾ low-medium about 8 min each side
⇾ high heat until browned
